Fourchaume Premier Cru "Les Vieilles Vignes"

Our Chablis 1er cru Fourchaume "Les Vieilles Vignes" is produced from two different Fourchaume plots – one with 44 year old vines and the other with 56 year old vines.

These very old vines, whose roots go deep down into the ground to draw on all the goodness from the Chablis terroir, produce grapes with a fantastic concentration and ripeness.

The concentration found in the grapes has enabled us to produce wines of great complexity. This Fourchaume of distinction has evolved and improved over its ageing time in oak casks, on fine lees.

Fourchaume is a powerful and full bodied wine that will leave a great impression. A wine to remember!

Technical informations:

AOC: Chablis 1er cru

Grape variety: Chardonnay

Origin: Domaine P. Bouchard

Viticulture: No use of fertilisers, working of the

soil, careful treatments, high trimming, manual

harvest, yields kept between 38 and 50 hl/ha.

Vinification: 100% in oak casks for 5 months

followed by pumping over in vats and ageing for

6 months.

Bottling: A year after the harvest

Cellarage potential: Can be drunk after 3 years,

but will keep for up to 7/8 years.

Annual production: about 8 000 bottles
